When we must source from outside Utah, we know each producer by name and what they stand for. Our fish and seafood are sourced from the West Coast.

Once the freshest ingredients are assembled together, Master Chef Shon Foster curates the dishes that come from the innovative thinking of Chef Sergio. Influences include Chilean, Pan Pacific, and American cuisines that result in a fusion of highly refined flavor and texture profiles. Named 2023 Utah Chef of the Year, Chef Shon requires perfection.
